Give a Becca an Apple

Hmm Monday...what to say. It was a fairly standard Monday. It wasn't too busy at the restaurant but there was a decent amount of morning prep to do. The woman I usually cook with had to stay home to take care of one of her kids so there was more for me to do. She usually flies through all the prep and there isn't as much for me. Other than that it was same old same old. Lunch was really slow other than a mini rush, but then people kept slowly trickling in which seems to happen whenever we are trying to close up a little early.

On one hand I'm "ugh Mondays" but on the other I sort of like them because its a restart. I like to start the week off right with a good run, and thats exactly how I started today off! I was excited to see it was almost 40 degrees when I woke up. I don't need th extra layer of a hoodie when its around that temp. I of course had a bit of marathon bread with cinnamon raisin pb before my run. How could I resist after getting a fresh loaf (did I mention when I bought it it wasn't even bagged yet because it was still cooling...nice!).

Breakfast: Apple, Cranberry, and Almond Oats! My Monday mix consisted of 1/3 cup Scottish style oats, about a 1/2 cup chopped apples, 1/4 cup cranberries, a tablespoon of sliced almonds, cinnamon, and 1.5 tablespoon ground flax. I topped it with some non-fat cottage cheese and an additional apple slice. I also ate a piece of banana my mom must have forgotten about from her breakfast and some grapes.


Lunch: My lunches at the restaurant seem to work better broken up and more as snacks. I ate a non-fat fage and baby carrots while waiting for the lunch reservations then around 1 ate a honey graham clif zbar when I got hungry again. I forgot my camera at home but I think you guys know what that stuff looks like.

Pre-Dinner Snack: I probably did not need to eat this since I made dinner soon after but I was thinking about it all during my shower and didn't expect my mom to get home early. I ate the remainder of my apple from the morning (a pink lady if your wondering) with some non-fat cottage cheese and a few more carrots. I got dinner together about an hour after finishing my snack.


Dinner: I literally got dinner together in less than 10 minutes today I think. They had some decent size scallops at Wegmans and my mom asked if we got them would I pan sear them...of course I would! With the scallops I sauteed some frozen Chinese blend veggies with a little salt, pepper, garlic, and ginger. For both the scallops and veggies I used a combo of pam evoo spray and a little actual evoo. I also warmed up some leftover spaghetti squash. I ended up eating another scallop my sister didn't eat (she ate a whole bunch of leftover pasta with her dinner) and some more spaghetti squash.


Mom cut up some tomato and fresh mozzarella, I had a slice of each with literally a splash of wine from last night to help finish the bottle.


Dessert: Damn you ice cream...there is so much of the stuff in the house with my sister home. I can't avoid it. I had about a 1/4 cup of vanilla and chocolate with some blackberries and some crumbled brownie (plus some other crumbs...they are almost gone luckily).


I'm hoping I get to sleep earlier than last night. I got in bed early feeling tired, but just could not fall asleep and kept waking up. Its a bakeshop day tomorrow so I'll be up super early. I might try to go to the gym afterwards...but if the crummy weather hits as predicted I'll probably hole up at home! Until tomorrow, have a good one guys!

Random observation: Do any of you read Oxygen magazine? I pick it up every once in a great while but I have to say I'm a bit perturbed by the ads in it. A lot of them promote weight loss supplements that I think are either (and excuse my language) full of shit or seem dangerous. It really bugs me...I guess I should actually be saying that to the mag not you guys but I guess I wanted to see what others thought. I really don't like how the ads are formatted and almost appear like articles when quickly browsing through...anyway, thats my two cents...

Glad your Monday wasn't too bad ;) I agree that the "restart" on Mondays sometimes is really nice! I love your desserts- like I said yesterday- you have great portion control! Everything in moderation and you do it so well!

I should have stated that I love the content of Oxygen magazine, but despise the weight loss drug ads - so I agree with you!! :-)

I hate hypocritical magazine ads. it negates all the good stuff they may be trying to say.
